Tomato Salad and Shish Kababs

Our girls have always loved to cook.  Happily, all the work involved in our big garden last year did not deter them from that!  Tomato salad is one recipe that they discovered when trying to deal with our bumper crop of tomatoes last year.  And they've been asking about planting onions!  I keep telling them that onions are fairly cheap so we can just keep buying them, but I might have to give in just for the experience, they love them so much!  Weirdos!  

 Originally they  created this recipe using  Mozzarella balls but they make it without when we don't have any Mozzarella cheese at home...

Tomato Salad

5 chopped Roma Tomatoes
1/3 of one chopped Onion
2 chopped Roasted Red Pepper slices
1/4 cup of Greek Dressing

 Mix together, let sit to marinate for an hour or more for best flavor.

 
I guess most people know how to make Shish Kabobs, but there are many different foods you can add, and sauces you can enjoy with the kabobs.  Here are basic directions using the bamboo skewers you see at the store.  I also have metal skewers, but I keep the bamboo ones around because the kids like to build things with them (?? lol, yes).  

Simple Chicken Kabobs

Fill a 9X13 pan with water.  Take the Bamboo Skewers out of the package and place them in the water.  This is so you don't have burning sticks on your grill!!  Trust me on this!  Keep them in the water for about twenty minutes.  


While they are soaking, cut up chicken breast, onions, and green pepper.  You may also like to add cherry tomatoes and chunky Pineapple pieces.   

After the 20 minute soak, thread the food onto the skewers.  Preheat the grill, then grill the kabobs until the chicken is done.  Be patient!  Not only do you run the risk of burning up the skewers, you could overcook the chicken.  

While they are cooking, you can baste the kabobs with barbecue sauce, or any other sauce.  I also enjoy just basting them with plain olive oil.  


In addition, there are a variety of sauces you can use to dip your food in when you are done, but I'm going to save that for another post.  

I am still working like crazy to come up with ideas for my son's college graduation party.  I'll be posting about that soon.
